If you do that, your gameplay for the main world won't be compromised as a result of you being massively over-leveled, so you can still enjoy the game as it's intended to be, and you can do the Trials.

Example: a level 40 sword vs a level 37 bow as loot dropped. This is a good way to make more drachmas if you sell your duplicate weapons/shields a lot.
